玉米片脆饼 Crunchy Cornflake Cookies



第二个新年饼干了, 趁着近来比较空闲, 就快快尝试。 这个玉米片脆饼其实也不是新的食谱了, 三年前我做过了。 只是后来一直把它忘了, 最近才发觉这个饼干其实也很棒。 做法也是非常直接的, 我觉得不难失败, 而且材料也很容易找, 可以试试看噢!


玉米片脆饼
食谱取自 Do What I Like
  • 牛油 (室温软化) 110g
  • 细糖 50g
  • 盐 少于1/4tsp
  • 蛋黄 1个
  • 香草精 1/2tsp
  • 橙皮削 1-1.5tsp
  • 低筋面粉 150g
  • 泡打粉 1/4tsp
  • 苏打粉 1/8tsp
  • 玉米片 (corn flakes) 压碎 50g
  • 蔓越莓干装饰用
  1. 把牛油, 细糖, 盐用电动搅拌器打发。
  2. 加入蛋黄和香草精, 搅拌均匀。
  3. 加入橙子削, 拌匀。
  4. 筛入粉类, 再加入玉米片。
  5. 混合一起, 形成一个软面团。
  6. 取半大匙面团, 揉成圆形, 压平, 在中间放一小颗蔓越莓干。
  7. 放入预热175'C的烤箱, 烤18-20分钟。

  • 110g butter (room temperature)
  • 50g castor sugar
  • less than 1/4 tsp salt
  • 1 egg yolk
  • 1/2 tsp vanilla essence
  • 1 - 1.5 tsp orange zest
  • 150g cake flour
  • 1/4 tsp baking powder
  • 1/8 tsp baking soda
  • 50g cornflakes
  • Cranberries for garnish (optional)

1. Sieve flour together with baking powder and baking soda.
2. Cream butter with sugar and salt till creamy.
3. Add in the egg yolk and vanilla essence and cream till well combined.
4. Stir in the orange zest.
5. Fold in the sieved flour mixture and cornflakes. Mix till you get a soft dough.
6. Divide dough into equal pieces of about 12g each, shape into flat rounds.
7. You can stick a cranberry into the middle of the cookie before baking.
8. Bake at 175'C for 18 - 20 minutes or till golden brown.



如果你是一个很喜欢吃脆脆的饼干的朋友, 那这个应该很适合你吧。 加了玉米片的饼干真的很香脆, 而且这个饼干真的要 ‘handle with care’了, 因为太脆了, 比较容易裂开, 不过都还好, 放进去口还是很美味。 这个饼干我也很喜欢, 先打四颗星星吧!

    Cornflakes are yummy on their own and must be adding lots of extra crunch and taste in your cornflake cookies... yummy!

  6. i also like that there is some orange zest in there..the way you described them , i can imagine their crunchiness and the wonderful aroma of these cookies!

    1. I have never tried, but I think is not a problem. Do keep in air tight container and in cool dry place.

  9. Min, 想请教你!我做的德国奶酥无法像你这样可以弄到圆粒,我的面糊实在很粘稠!根本无法做到搓揉!无论我冷藏多久,出来后又暖化!很懊恼!
    以放进去烤炉!就融化,变成扁扁的!只有去年我拼命加粉才可以让面团可以揉到圆粒!
    可以教教我该怎么办?

    1. 有点奇怪, 其实如果放进去冰箱就会比较好操作了。 有时搓的时候手的温度也会影响, 所以当面团比较粘的时候, 我会先去洗手降温, 会比较好搓的。 至于放进去就扁扁, 这个有点想不通, 你的奶油是冰箱拿出放置一会儿才用, 还是怎样呢?

    2. 我是冰箱拿出放置一会儿才用,等牛油软化了才用!不过这一次我怕又太粘,我没有等到很软化就用!可是还是一样!我放进去冰箱,面糊表硬掉,表面比较硬,可是里面一下子降温后又变糊了,根本无法用手搓!真的很懊恼!找不出原因!难道是天气太热?我做了几次还是这样!实在很懊恼找不出我的原因!

    3. 牛油不能等太软才用, 手指按下去有印就可以用了。 我觉得放进去冰箱太久也不是一个办法, 但是我觉得手脚要快, 在面团开始粘之前就要快快搓圆了。
