早餐店的蛋饼 Taiwanese Pork Floss Omelette


记得蛋饼吃得最频密的时候, 就是在台湾旅游的日子了。 那里的典型早餐少不了蛋饼, 而且口味很多, 每天都可以吃到不一样的, 很不错。 后来回到这里, 偶尔会吃下台湾小食店卖的蛋饼, 看他们做的方法不难, 所以我自己在家也有样学样, 来做肉松蛋饼当早餐!


早餐店的蛋饼
食谱来源:小小米桶

面糊材料:(直径26~28公分的蛋饼3个)
  • 高筋面粉…..8Tbsp
  • 太白粉(树薯粉或玉米粉)…..2又1/3Tbsp
  • 水…..180ml
  • 盐…..少许
鸡蛋配料:
  • 鸡蛋…..3个
  • 葱花…..适量
  • 水…..每一份蛋饼用1大匙
  • 盐…..少许
1. 麵煳材料拌匀静置10分钟,醒面 (我在麵煳裡 加了一点葱花进去)
2. 要开始热锅煎蛋饼之前, 先把一粒鸡蛋加上、1大匙的水、2~3大匙的葱花、少许盐,拌匀
3. 锅热,抹上薄薄的一层油,将1/3量的麵煳倒入锅中,举起锅打圈转动锅身,让麵煳自然扩散成圆饼状
4. 等饼皮微微半透明时,翻面,这时马上倒入蛋液(蛋液要摊匀)。 想吃酥一点口感的朋友,可在翻面后 于锅子边缘,加入少许油, 再晃动锅身,油就会滑到锅底,将蛋饼煎成酥酥的。
5. 等蛋呈现凝固状态.就可以开始放肉松, 捲蛋饼了。
6. 捲好,起锅切小块,淋上酱油膏或是甜辣酱,即可.

Taiwanese Pork Floss Omelette
- To make 3 omelettes

A
  • 8 Tbsp high protein flour
  • 2 and 1/3Tbsp of corn flour
  • A pinch of salt
B
  • 3 Eggs
  • Some spring onion
  • 1Tbsp of water for each omelette
  • A pinch of salt

  1. Mix ingredients from A together and leave it for 10 minutes.
  2. Mix one egg with 1Tbsp of water, some spring onion and salt.
  3. Heat oil in a pan, add in 1/3 of the mixture from A,move the pan to spread them out evenly.
  4. When the omellete is half transparent, flip it to cook the other side, and add in the egg mixture.
  5. When the egg layer is almost set, add in the pork floss and fold the omelette and cut into pieces to serve.


这个蛋饼我一口气做了四个, 要一个个做所以用了比较久的时间。 而且我用巴西叶碎取代了葱花, 香味也很棒。 这次我没有淋酱, 但是也已经很好吃了。 记得在倒入面糊后, 要以很快的速度转动锅身, 而且我有在面糊另外加入2Tbspd的水, 变成没有那么浓稠, 比较容易扩散成为圆形。 因为我喜欢皮薄肉松多多的蛋饼。

  7. I can't read chinese much, but your english ingredients lack water for the "A" part, so i checked the chinese, there's 水.. understood it as water.. :) i get to learn chinese word, and of course to cook one of my favorites, thanks so much!
